I love this simple tomato soup recipe, its filled with my flavour and nutrients to keep you healthy & warm during those winter days.

Ingredients
Serves around 3/4 I would say. It serves a big pot.
1 large garlic clove
1 carrot
1 white onion
2 sticks of celery
tin of chopped tomatoes
5 vine ripened tomatoes
tbs of tomato puree
rock salt & grinded black peppercorns
olive oil
700mls veg stock
(down to preference on how thick you want soup). 500ml would give it a thicker consistency.
Steps
Step 1 –
Put all veg in a colander and wash thoroughly. Chop up your white onion, carrots, garlic. chilli & celery into small chunks then add to large pot on medium to high heat. Add salt & pepper, give it a stir & leave to simmer for 10 minutes or until all veg has softened up.
Step 2 –
Cut tomatoes into quarters, add to the pot alongside your tin of chopped tomatoes & then add tablespoon of tomato puree. Add 700mls of Veg stock. Give it all a mix and bring to the boil then reduce heat & leave to simmer for a further 10 minutes.
Step 3 –
Take off the hob & purify to desired thickness. An optional step at this point & something I like to do a lot to create a herby taste.. Add leaves from a basil plant before purifying the soup, this gives it real flavour to the taste.

I love this soup served with either oatcakes & cheese, or homemade garlic bread with apple wood vegan cheese as seen above. Delllliciousss lunch time treat. It almost tastes like pizza!
