Mini Vegan Frittatas

Serves 2.. Or 1 ;)
easy peasy to make vegan & gluten free (depending on your flour choice) Uh! These frittatas are an absolute delight to be enjoyed and shared..

What you gon need..
1 cup of plain flour
handful of spinach or kale
tablespoon of jalapenos
1 cup of nutritional yeast
tea spoon baking powder
tea spoon salt
(optional) tea spoon mixed herbs

How to...
Okay so you have all your ingredients prepped Preheat oven to 180/200 degrees Now in a medium sized bowl mixed together the nutritional yeast, flour, garlic, salt & basil Add 2 cups of water, all of your veggies and mix well creating a batter with a runny consistency (not thick) Grease cupcake tin with oil Pour the mix into cupcake holder filling all of the holes in the tin Bake for 30 /40 minutes at 200 degrees Recommend longer for a crispier taste!
